Try cleaning the MAF Sensor. I was running a K&N on my 2001 Silverado and the Oil from the filter got on the sensor and was messing with the reading. Just make sure to use the correct cleaner, carb and choke cleaner is too aggressive.
I also switched over to a dry element shortly after and never had a problem again.
