As someone who learned how to drive in the early '80s on an automatic, I happened to stumble upon the ability to 'double-foot' very early; as a result I am slightly more adept than most at using the brake and the gas pedal simultaneously.

I bring that up to say:
When you say
"I can override mine by accelerating ... if you keep your foot on the gas it won't apply the brakes"
how can you be sure of the difference between
the brake is being applied but the gas is being allowed to overpower a limited application of the brakes
vs
the brake is absolutely not at all being applied
?
I know because if I don't have my foot on the accelerator and the red collision starts flashing, it applies the brakes. If you keep your foot on the accelerator, the flashing red crash comes up, but it doesn't brake. This was in an email the dealer sent me when I asked about it.

How It Works

  • When in FORWARD gear, AEB looks ahead of your vehicle and monitors other vehicles in front of you that you are following. Check your Owner’s Manual for the speed range at which AEB functions on your vehicle.
  • When the feature detects another vehicle, a green icon that looks like a vehicle is displayed in your Driver Information Center (DIC).
    • This icon may also display in your Head-Up Display if your vehicle has that available feature.
  • If you don’t respond fast enough or if a situation happens suddenly, AEB may automatically apply hard emergency braking or enhance your hard braking.
  • You can override the system at any time by pressing the accelerator if it is safe to do so.
  • If the system slows your vehicle to a complete stop, you can release the brakes with the ELECTRIC PARKING BRAKE switch (if your vehicle is equipped with the Electric Parking Brake) or by firmly pressing the accelerator pedal when it’s safe to do so.

Hit the parking sensor button to the left of the steering wheel under the vent. This will disable the auto braking feature. My truck freaks out sometimes when backing out of the garage and automatically stops me and at the same dirties a set of underwear. So I usually disable it until I am out of the driveway. This button takes care of that.

This is also useful if you have someone back there and you are backing up, to say, maybe hook up a trailer...just sayin, while I appreicate the safety aspect...sometimes it is useful having a friend back there to hook the boat up for you while you are driving...
