tow/haul also engages powertrain grade braking, so if you are going down a big downgrade or mountain it uses the transmission to help with braking

Good point. I have watched and can feel it too.One item that I have not seen mentioned above, is the change in the active suspension shock stiffness parameters, when you go into tow mode. I've watched this feature on 07 Denali with my Tech 2 live while driving, and the shock stiffness changes are much more pronounced in tow mode. Since your Escalade ESV has an active suspension, I would assume that the same changes will apply to your truck when you go into tow mode.
