I think you'll be fine towing your boat to the coast. Monitor oil and transmission temperatures. I can't remember if you'd have an additional transmission cooler but if you do and it's plugged due to prior lack of maintenance you'll see temperatures rise. If you're really worried maybe go out for a ~1h round trip dry run cruising at about 65-70 to see what happens?
I'd watch for missed or slipped or clunky shifts, and listen (with the windows open) to hear what the shift from drive to reverse sounds like.
Have fun with the rest of the work. The Bilsteins are a bit too soft for my taste, I prefer KYB Monomax. But to each his own.
