Transmission fluids and gaskets

Ok so I'm setting out to change my tranny fluid, filter, and the gasket. The foot pounds on the pan bolts I've found to be 22-30 ft lbs. is this true and what recommendations for fluids weights/brands?

And then I'm planning on draining my rear differential and refilling it. And recommendations on that and the torque for the bolts?
