The reason is that it's only legally required for the outboard seats to have head rests. Another reason is unless you are strictly a side mirror driver, that middle head rest makes it impossible to see from the rear view mirror.
You said you have 3 boys. Curious as to how old they are. Growing up as the youngest of 3 siblings I know if we were all in the backseat of the sedan all we did was fight. If we were in the 'Griswold family roadster' one or two of us would sit in the back to have our own space. I was under the impression that families opted for the suburban if they were planning to use that third row most of the time.
My boys are young, 7, 5, and 2, but I'm thinking of buying something that will take me 10 years so through some of their teen age years. Captains chairs are great but about three times a year I also need to take the grand parents with us on long trips.
