Water pump gasket question,

Hi, I'm replacing a water pump in my 2005 GMC Yukon right now and noticed the new water pump came with full size gaskets vs the gasket plates and O-rings that were on the original pump. Do I use the new full size gasket and get rid of the gasket plates?
Also, should I replace the the thermostat or anything else while the pump is out?

The pump I just put in came with both styles of gaskets. Since my Tahoe had the plate with orange rings, that's what I ended up putting back in. I took the opportunity to replace all hoses, both belts, and all those stupid GM hose clamps with standard hose clamps.
