Is your 07 an LTZ? I was thinking that LTZ trim Burbs and Tahoes had the chrome grill starting in 07. LS and LT trim burbs/hoes had the black grill like you got. My Burb is an LT3 but I added the LTZ grill cuz OEM plus mods r lyfe

Yeah it is an LTZ. And yeah OEM+ mods are best mods.

Maybe yours was in a fender bender in the past and they replaced old grill with lower trim grill to keep cost down? Or someone hated chrome and did the swap

Maybe the person that speced it out chose a black grill when they were building it. AFAIK its never been in a reported accident. I know the front end has been ran into at least two things before. But neither of the two I'm familiar with have caused any damage.
