Why should I not go fully old-school carbed (OBS)?

I think you got the wrong replacement sensor. I just looked at mine and it is one green wire. your talking about the sensor on the drivers side I assume? if yours is a single green wire yours is correct.

The wire left over is the solid green, coming from the wiring assembly. But the connector I bought from AutoZone fits the hole perfectly and everything. IDK, they said they only have one which is for both sensors. Do you know the exact name of the one for the cylinder head? Thnx.

I never replaced the head sensor just the one in the intake. I have tried like three stats all 195's and this is what my temp gauge does. When the engine is cold and I drive it for the first time on any normal day the gauge will go all the way past 210 and then when the stat opens it comes down all the way to almost that quarter mark that's between the 100 and 210 marks then it rises a bit and pretty much sits at the first or second mark past that quarter mark. if its a hot day in traffic it will sit just to the left of 210, this is what yours should be doing. Did you replace the clutch fan ? if its working properly you will hear it engage but only when it gets really hot outside.
