Just picked up a 2024 Yukon SLT 5.3L RWD and driving back from Florida to North Carolina with only a single stop I'm getting 17.5mpg.
Kept it in adaptive cruise control for 95% of trip. Road thru the night so no traffic either.

Is this to be expected or lower than normal?

Brand new vehicles typically run richer for a predetermined number of miles to aid in the break-in process. There are MANY components that are all finding their groove so to say, give it until 5k and see where you're at.

Also, cruise control will never give as good MPG as a well trained right foot in my experience over many years and miles of driving long distances.

Doesn’t seem that bad for a brand new vehicle that isn’t broken in running at 79mph with winter gas I assume. It is a V8 after all.

Also not sure if you reset this trip calculator after you left the dealer lot or is some of the pre-sale idling, shipping, lot driving etc baked into this number.

The difference between 60 MPH and 80 MPH is night and day too, also. I want the mileage I get at 60, but Real life is I end up doing 85 and even with the Duramax I'm at about 27MPG. At 60 I'm easily in the 30's.....

As @B-train stated above, I'm sure that you will get better mileage after the truck and all of its systems break in. My 2007 Yukon XL Denali with the 6.2 gets 14 - 16 mpg on the highway at 75 mph.
