That 300w sips power under normal (non blast mode) volumes. You should at minimum hook up a scan tool and see if anything comes up. You can trow codes and not have a check engine light. Also I would run an injector cleaner. And clean you air filter and TB as all three of these will recal the computer and it will relearn bad air mix. If these are dirty you can be robbing a good deal of power from your motor.

Is it possible that when my fuel pump went, I fouled my plugs by trying repeatedly to get her started?

All I have to say is Wow. If you had 1100lbs in your truck, the 5.3 should have had zero trouble to maintain 60 or 70 going up the hill. Did you Stop in the middle of the hill and start again? this just sounds odd your losing torque and HP bad. Plus the temp almost redlining was it there before Climbing the hill, was it normal 210 temp? When you hit the hill was the temp normal or high already or did it start to climb when you started to climb. When you hit the boards that engine should have put the power on and got you up that hill no problem. Take it in for a tune up, maybe your injectors need cleaning/ Its time for an over haul, new plugs, wires, fuel Filter, air filter and I look at flushing the tranny also.

Let me clarify. I turned onto the road/hill. So my speed was around 15mph. I accelerated to 30mph and couldn't go any faster. The more I think about it, I think my tranny missed a beat and didn't downshift properly. I should have let off the gas and slammed it again to see if it would have kicked down.

Update: Prior to this incident, I let my fuel run low, something I usually avoid. I'm thinking some sediment got sucked into the fuel system causing my problem on the hill. I also noticed a rough ride above 65mph on the highway.
After pouring in some Gumout (next time I will use Sea Foam) and filling up yesterday, truck is running strong on the highway and strong on highway inclines with only one short stretch where I felt I should have pulled a bit stronger (maybe trans was lazy). I have a feeling the problem might be solved, but really wish I lived closer to that hill so I can give it a good test. I'm considering pouring in some SeafFoam Trans Tune to clean my trans.

ok, my rear tire was low on air (found out I picked up a nail). Got that fixed, and the fuel system cleaner seemed to smooth things out. I'm running strong again. Not sure if these were the main cause or just coincidence but I'm good now.

I would change your fuel filter while your at it because I bet that picked up some junk. 10$ 15 minute replacement. On the Yukon there in a very odd spot its near the oil filter. Its better to be proactive then reactive.
