usually probes are placed directly in the radiator fins against the tube. Inrush current could be doing that How about using a slow-blow fuse or delayed trigger circuit breaker made for motors.

Hummm... And another thing... I keep blowing the main power to the fan fuse... It came with a 25 fuse but im using a 30 fuse... And its still blowing...

Start up(inrush) current may be an issue. If you use current protection that accounts for that then you may have better results assuming wire sizing and other parts are in proper working order though 25 amp seem very low for fan fusing.
Your probe is in the wrong spot, it should be by the upper radiator hose side, not the cap side. Otherwise you are just measuring the already cooled fluid.
