I ask because I have been thinking of doing something similar and I like how you added them to both the firewall and the hood, the areas that are lit seem perfect for the application.

What adhesive did you use? The stickey backer on my sucks.

The strips I get have 3m adhesive.
My prep allows the adhesive to stick properly and not fall off.

And yeah you can see quite well with the 5630's and its a nice white light as well.

Far as water, yes and no, depends how crazy you get with the water and if you don't seal the proper things. I personally do as Ezdaar has stated and then quick rinse with the hose and all has been well. But then again, i don't let me bay get that dirty to begin with.

Can that under the hood lighting be done on a 2007-14 Tahoe? If so, are their any instructions?

Nicely done! LED's are awesome. I'm inspired.
I use purple stuff when necessary. I find that Murphy's oil soap does a nice job as well. It's vegetable based and doesn't hurt plastic or vinyl. Smells a lot better too.
