Engine break in procedure

What does everyone like to do when they break in there engine for the first time? My chilton manual says to baby it for 500 miles but to seat the rings get it up to 55mph and let off the gas until it drops to 30 mph and do that 12 times but i also had my machine shop mechanic said not to baby it, and i need to get her broken in before next Saturday i need it for a trip to vegas

always drive at varying speeds during the break in like first 500 miles
thtats always what they tell me when ever ive purchased a new vehicle in the past
