Just keep fighting it with them. My mom had a GMC Envoy about 7 years ago. It was a rare one, that my dad had shipped in for her. Bigger motor, 4x4, full underbody skid plates, bigger wheels, and a few other things. Basically it costs 10-15k more then a regular envoy did. She was rearended at a stop light. The Envoy was brand new only out 6 months. It was worth 50,000$. Insurance said it was totalled and only wanted to give her 25,000$ for it. Said it was way over modified to fix it all. Funny thing is, we didnt modify it. We bought it from GM that way from a new car dealership. We got a lawyer and settled things and got 60,000$ for it... Just keep fighting and 'flex your muscles". We had to do the same thing when her escalade was wrecked.
