Today I was driving from Ocean Shore, Wa back to Tacoma, Wa and my 99 Tahoe started acting funny, so I pulled over to check the oil and pulled out the oil stick and it had some mustard color slurge & wanted to get some feedback on what it may be that's causing the problem....I'm also new to the form. it's a 5.7 Vortec

That sludge is likely a result of coolant leaking internally, and mixing with the oil, due to a blown head gasket. What were the symptoms when it was acting funny?

first check again oil, tranny and coolant in radiator. What is the exact color in each. is any one over or under filled since last check.

well before I headed out I checked all fluids and everything was good, on my way back I felt the truck shaking and pulled over open the hood and checked the radiator it barely had any anti freeze in so I filled it up with water

In that case look to see if one of the plugs looks contaminated and we can go from there without spending to much to diagnose. Certain plugs can make or break a manifold leak theory on the 350 vortec's.
