Should I do a rebuild or a swap?

So I have a '00 and I am about to hit 215k miles, my 5.3 has developed a knock at start up and is starting to burn oil. I am using this as an excuse to either rebuild or do a 6.0 swap.
This is my first Tahoe and I can't decide which one so I would appreciate your opinions.

Dont mean to hijack but how much worse does a 6.0 do on mpg's? There only like 25 hp more arent they?
