Steering wheel question

1997 Tahoe 2 door.
Just had some front end work done, height adjusted and front wheel alignment completeted.
Was expecting my steering wheel to be perfectly centered when I got this back.(was not centered prior to the above work).
Can I "reclock" the wheel to properly position it now that all the work is done or does it just go on one way only.

I have an 05 and just recently noticed the steering wheel doesn't lock with the ignition off. Could this also have been the result of someone aligning and forgetting something?

What if going back to original alignment shop is not an option (long story).
can I reclock the steering wheel or do I need a new alignment, done properly from a steering wheel centering perspective, from another shop.
