What is this hose by cam position sensor?

Cleaning up (repairing) chewed wires from ground squirrels on the oil pressure sensor & cam position sensor.
What is this hose/cable? 2001 Tahoe LT 5.3

That's a breather for the transmission. It connects down near the transmission bellhousing. That's completely normal.

There's also a similar breather if you have a transfer case on the 4x4/AWD version.

Yep, breather. Can get new if do not like that being chewed on. Dorman #14689. Not a fan of Dorman but may be ok for this application.
