Just out of curiosity, did you delete the downstream O2 sensors in the tune? Not that it would matter other than throwing a code for cats not working.

Haven’t had access to a tuner yet to do so

I would question your scanner app; can you confirm by using a different scanner to read the MAF values and the fuel trims?

Is the replacement MAF OE GM? How do we know it's good?

So you’re getting codes then? There must be some being thrown. What exactly are you seeing as far as DTC’s?

Bought a brand new one from auto zone it’s a Delphi brand one and it’s the only one I have access to right now
