I just bought my 2007 Yukon a couple months ago, the previous owner stayed that the only problem they’ve ever had with it was this exact same issue. Said he had to tow it home several times because of this. After changing the oil pressure sending unit numerous times finally got the oil level sensor swapped out and hadn’t happened for the last year he owned it... food for thought.

Excellent! Thank you for the info! That's a much easier change than the oil pressure switch... Would definitely try the oil level switch replacement first!

Good to know. I have changed the pressure sending unit and yes it's kind of a PIA process. Can't say I even knew there was a oil level sensor.
